Potato Cakes

Potato Cakes are a great way to use up leftover mashed potatoes. You can use homemade or boxed potatoes, whichever you have on hand.

3 cups leftover mashed potatoes
1 egg
3 green onions, chopped fine
3/4-1 cup all purpose flour
Salt and pepper

Combine all ingredients until forms a thick paste.

Drop by 1/4 cup spoonful (I use a measuring cup) into hot oil.

Brown on each side, drain on paper towels.

Sprinkle with salt while hot.
