Sweet Potato Casserole

3 lbs Sweet Potatoes, baked and peeled or peeled and boiled

1 Egg

1 can Evaporated Milk

1 Tbs Cinnamon

2 Tbs Flour

1/2 cup Sugar

2 Tbs Bourbon

Topping:

1/2 cup Brown Sugar

1/2 cup Pecans, chopped

1 Tbs cinnamon

Mini marshmallows

Mash together cooked sweet potatoes, egg, milk, cinnamon, flour, bourbon, and sugar.

Pour into greased casserole dish.

Combine brown sugar, pecans, and cinnamon.

Sprinkle over sweet potato mixture, then top with mini marshmallows.

Bake at 350 degrees for 25-30 minutes, or until top is golden and bubbly.
