Corn Chowder

Ingredients:

1 lb kielbasa sausage, sliced

1 onion, diced

2 cloves garlic, minced

1/4 cup flour

4 Tbs bacon grease or butter

4 cups milk

2 cups chicken stock

3 cans (15 oz each) whole kernel corn, undrained

4 potatoes, diced

In dutch oven, or other large pan, sauté onions and garlic in grease or butter until translucent.

Add flour and stir to combine.

Slowly pour in chicken stock, mixing thoroughly.

Add in corn (including liquid), potatoes, sausage, and milk.

Bring to a boil, then lower to simmer. Cook on low for 3-4 hours, covered.

If you don’t like, or have on hand, kielbasa, you can substitute bacon. Just fry the bacon until crisp, remove from pan, and proceed with the remainder of the recipe.

You can also add in shredded cheese to the soup, if desired, or use as a topping.
