Vegetable Soup

Today is a nasty, chilly, rainy day. So a big ‘ol pot of Vegetable Beef Soup is already simmering away in the crock pot. I love recipes that aren’t exact, use what you have and it tastes a little different every time. This morning I used:

1 1/2 lbs of beef stew meat
1/2 lb of bacon, chopped up (bacon for fat and flavor)
2 cans tomato juice
1 small head cabbage, shredded
5-6 potatoes, peeled and cubed
2 bags frozen mixed veggies
Salt, pepper, and chili powder to taste

Brown the beef and bacon together, no need to drain, there’s not a lot of fat. Add the cabbage and let it wilt down a bit. Stir in the rest of the ingredients and let it simmer 4-6 hours. I always serve with cornbread!
